名列波爾多St. Emilion一等頂級酒莊(B組)的Chateau Canon的酒莊名稱源自18世紀的莊主Jacques Kanon，據說他原本是海盜出身，並且因此累積了財產來購置田產。
1997年Chanel集團買下本酒莊，花了很多年慢慢將葡萄園大幅改造，除了拔掉老病的樹重新種植之外，並且將種植比例調整為Merlot 60 % 和 Cabernet Franc 40 %。本酒莊就位在St. Emilion精華區的石灰岩臺地上，葡萄園在薄薄的石灰質黏土下是厚達幾十公尺深的石灰岩；這樣土質所生產出來的葡萄酒在年輕時比較封閉嚴肅，可是經過適當陳年之後，卻可以表現出別人難以表現的細緻和勻稱。這也是它可以長年來一直保持在被列為一等頂級酒莊的重要因素，並且被視為經典傳統St. Emilion紅酒的代表。
Tasted at the Château Canon vertical, the 1995 Canon is a controversial wine whereby a proportion of the bottles were affected by an infection in the winery. It's a lottery what you will find in your glass and so I requested a bottle to find out for myself at the property. The nose is quite foursquare, although there are some attractive mulberry and leathery aromas. It is on the palate that the problem occurs because if feels very dry and bitter, especially on the finish. It's not a terrible Saint Emilion by any means, but it is clear that this is a long way from where it should have been and any bottles should be drunk now. It's a shame because you can envisage a satisfying wine. But you cannot taste what should have been, just what is. Tasted October 2015.
