一個法國釀酒師的加州冒險夢
Stephan Asseo是一位擁有非常有趣的人生經歷的法國人。出身於法國波爾多St.-Emilion，卻在布根地攻讀釀酒學校；1982年畢業後回到波爾多成立一家酒莊，之後其家族又陸續買下幾家波爾多的酒莊，在其畢業後的15年間，他已逐步成長為一位很有工匠精神，但是也非常有挑戰精神的釀酒師。他有許多釀酒上的理念已經超越了法定產區法規許可的範圍，這驅使他在1996年到世界各地去尋找他理想中的葡萄酒產地。從南非到黎巴嫩，從阿根廷到美國加州Napa，他最後在加州Paso Robles找到了理想的酒鄉；他愛上了Paso Robles西部的風土條件，於是就在這裡開始了他的冒險：L'Aventure酒莊。
為了讓葡萄樹在此處嚴苛的環境中發展出最好的品質，Asseo先生採用高密度的種植促使葡萄樹之間產生競爭效應；他並且謹慎地進行疏葉、疏枝，以及綠色採收，讓產量低到大約每英畝2到2.5噸，相當於一株樹的果實釀一瓶酒。他會讓葡萄達到完全成熟才採收，讓果實的濃郁集中香味可以充分在酒中表現出來。採收工作當然是人工進行，並且酒是以法國橡木桶陳年，以釀出細緻優雅而豐富的酒質。Asseo先生的冒險精神找到了Paso Robles葡萄酒的未來：偉大而均衡的紅酒。這個酒莊的精彩表現連Robert Parker也讚賞本酒莊說：「這是加州中部海岸區裡的超級巨星之一(This is one of the California Central Coast superstars)！」

The 2017 Côte a Côte is a blend of 48% Grenache, 32% Mourvèdre and 20% Syrah. Medium to deep ruby, it explodes with tricolored fruits: peach cobbler, apricot, marionberries, boysenberries and crushed blackberries with accents of dried leaves, saline, blood orange peel, pink peppercorn, cured meats, thyme and dried lavender. Medium to full-bodied and silky, it slowly spreads its wings in the mouth, blossoming into lovely technicolor fruits with a floral vein. It has a pixelated frame and freshness that begs for another sip, finishing long, layered and lifted. This is stunning!
