Canon La Gaffelière是波爾多聖愛美濃(Saint-Émilion)產區裡聲譽卓著的酒莊，並且被列為一等頂級酒莊B級(Premier Grand Cru Classé B)，品質的優異十分受到肯定。本酒的莊園位於聖愛美濃村外的南側坡地上，這一帶大約在18世紀發展成葡萄園，十九世紀後半貴族世家的Malet-Roquefort家族將本酒莊經營成聖愛美濃最頂尖的酒莊之一。
這個酒莊輾轉到了1971年由德國von Neipperg伯爵家族入主，1983年起年輕的Stephan von Neipperg開始接管本酒莊，並大刀闊斧地進行改革，將本酒莊的水準快速而大幅地提升；1996年起聘請到一位Stephan Derenoncourt來當釀酒師，將本酒莊引領到迷人的全新風格。
當然要釀製好酒的話，優良的種植條件是不可或缺的。現今的嘉法葉堡擁有19.5公頃的面積的葡萄園。本莊園位於聖愛美濃臺地的南側石灰岩坡地上，葡萄園是面南坡向，黏土石灰岩與沙質黏土讓土地性質複雜獨特。園中種植的品種比例是Merlot 55%、Cabernet Franc 40%和Cabernet Sauvignon 5%，平均樹齡達45年。
本酒莊在釀酒技術上的獨特之處是在橡木桶熟成期間將細微氧氣打入酒液中，讓酒質提早成熟少澀味而且口感更圓潤。這樣的做法賦予了他們的酒相當純淨柔美的果香和細膩緊致的口感，被視為享樂主義的代表性酒莊之一。其近年來的卓越品質表現，從它連續3個年份入選美國Wine Spectator雜誌的年度百大好酒可見一斑
Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Canon la Gaffeliere has a lovely chestnut-tinged bouquet with satisfying, commendable fruit generosity given the growing season, brimming with buxom raspberry and wild cherry scents. The palate is smooth on the entry, quite gamy in quality and curiously reminding me of a fine Stellenbosch Cabernet blend (meant as a complement). I admire the depth and weight of this Saint Emilion, and while it is just beginning to show some dryness on the finish, it should give pleasure for another 5-6 years. Tasted February 2017.
